Drying the coffee is the longest and most important step.  A batch of beans is washed each morning and dried all day on the covered patio.  At the end of the day the beans are moved by auger into large propane fired driers for the night.  Then the coffee is allowed to dry in the sun for a day.  This open air drying is preferable to the gas dryers but at the peak of the season there isn't enough space to air dry it all at once.  The gas driers allow us to store the coffee for a few days until it can be sun dried.
